is it a good idea to have 1 each of all goods deposits for your age or just the ones you have boosted I have been getting rid of previous ages like dye for current ones my current age is high Middle Ages

Only the boosted ones. The others you trade.

unless you're intending to never interact with other players, you should aim for just the boosted goods.

I usually leave each of the previous boosted goods production buildings and build 2 of each current boosted goods buildings. But its reasonable to do up to Progressive era. In later eras its current boosted goods only.
