Can anyone tell me how these work please? If I send them into battle and they are defeated, do they disappear from my itinerary? Are they effectively 'dead' and non recruitable?

Every unit that you send into battle and that is defeated can only be revived with diamonds. Otherwise they are gone form your army.

Unattached units are those from traz or GE which are not trained from a barracks this applies to rogues and champions as well.

There are many more ways you can get them. Traz and GE are just two of those.
